The Pony, a new art-focused restaurant in Denton, is scheduled to open in the second half of August. The establishment aims to serve as a community gathering place, combining Italian cuisine with creative activities such as a pottery bar and live music performances.
The business is entirely owned by a family group. Jessica Madsen, a painter, serves as the owner, while her husband Owen Madsen is the executive chef. Their son, Dorian Marsh, is a co-owner and musician who also directs marketing and entertainment. Dorian’s fiancée, Izabella Tylen, is a ceramic artist and the creative director.
The concept originated during a family trip to Terlingua and Big Bend in West Texas. The couple, who previously worked in corporate roles, decided to pursue a more personal venture after being inspired by their children’s lifestyle. The family constructed much of the interior decor, including furniture, lighting, and the stage.
The name The Pony comes from a guitar Dorian Marsh used while busking in Denton during his time at the University of North Texas. Jessica Madsen stated the name reflects an important part of their family story.
The menu will feature Italian dishes inspired by family recipes, including 600-day-aged prosciutto, paninis, small-batch appetizers, and specialty pizzas. Beverages will include cocktails and an olive oil flight. Gelato will be produced daily by a local business.
